I’ve seen an example of using an example of getting token holders for EVM (Token Holders API | Blockchain Data API (V2)) but nothing for Solana on EAP.

Yes. Currently, we do not have a Token Holder API for Solana. Keep track of the updates we share via telegram and newsletter we are backfilling historical data for Solana.
